Delicious Fresh Corn!

Corn at its peak in the summer is a real treat.  It’s sweet, crisp and can almost be eaten raw.  I just remember, as most of you do, that we would always have it on the cob.  Well that always made for some fun messy eating and a serious session with the dental floss when you were finished.  We lived in Trinidad for about a year when I was in third grade and one of my favorite snacks was “burnt corn.”  Really, there would be folks on the side of the road roasting the corn over an...

I’m so excited to have the chance to meet with my “Mama’s” this morning for a time of brainstorming on the Chef Shane Kelly Eating Plan.  So far I’ve had about 8 Mama’s all with 2 or more chillin’s ranging in age from 2 and up cooking up my recipes for breakfast, lunch, dinner and snacks…how about that?  Since I don’t have children they have been an incredible help in testing my recipes on their families and giving me invaluable feedback.         This blog is to publicly thank them for...
